TORONTO, Sept. 26, 2024 – estiatorio Milos, the globally renowned Greek restaurant celebrated for its commitment to quality, simplicity, and authenticity, proudly announces the grand opening of its newest location at 330 Bay Street in Toronto’s revitalized financial district. This marks Milos' second Canadian location and its 12th globally, introducing a refined dining experience within a historic Toronto landmark designed by Alfred Chapman in 1924.
Since its founding in Montreal in 1979, estiatorio Milos has earned a reputation as the world’s premier Greek restaurant, serving the finest line-caught fish and seafood, seasonal vegetables, and expertly sourced meats. The Toronto location continues this tradition, with its fresh seafood flown in from the Mediterranean within 24 hours.
Set within the Northern Ontario Building, part of the Dream Collection, Milos Toronto features refined interiors designed by Jeffrey Beers International and an elevated menu inspired by Chef and Founder Costas Spiliadis’ dedication to using only the freshest ingredients. The new location introduces exclusive offerings available only at Milos Toronto.

Exclusive Toronto Offerings
Milos Toronto is the first location to introduce a special Bar Menu, available Monday to Friday from 4 p.m. and weekends from 5 p.m. This exclusive menu offers a relaxed yet elevated experience, featuring Grilled Portuguese Sardines, Loukaniko (charcoal-grilled sausage), Lamb Chops, Fava Santorini, Sepia with black ink risotto, and an assortment of sashimi, tartare, and fresh seafood delicacies.
The Toronto location also debuts a Family-Style Menu, reflecting Spiliadis’ belief that “sharing food at the table brings people together.” Signature dishes include Slow-Cooked Ontario Goat with Greek herbs, Whole Roasted Giannone Farm Organic Chicken (a Spiliadis family recipe), Rabbit Stifado with xinomavro and Greek fried potatoes, and Oven-Roasted Bone-in Canadian Lamb with Easter salad and roasted Charlotte potatoes. These meals, designed for four to six guests, replicate the cherished gatherings of Chef Spiliadis’ childhood.
At the heart of the restaurant is the Milos Signature Fish Market, where guests can personally select their seafood from an exquisite display of pristine Mediterranean fish, shellfish, and seasonal produce—mirroring the lively markets of Greece.
Toronto is also the first location to feature a Cheese Monger’s Selection, offering an artisanal assortment of Greek cheeses, dried fruits, nuts, and wines, displayed on a vintage harvest table for a personalized meze experience.
Stunning Architectural Design
The restaurant’s design pays tribute to both Toronto’s rich heritage and Greece’s ancient past. A hand-plastered conical entrance, reminiscent of a Greek windmill, welcomes guests into a 7,000-square-foot dining space. The Atrium Dining Room, enclosed by heritage limestone facades along Bay Street, provides an exceptional backdrop, while the bar and lounge feature a 65-foot-long Pentelikon marble bar adorned with ceramic tiles in Aegean-inspired hues.
Greek elements are seamlessly incorporated throughout the space, including Pentelikon marble, wide-plank oak flooring, custom pendants inspired by traditional fishermen’s lamps, and landscape photography by Montreal artist Evridiki Spiliadis.
A Taste of Milos
Signature dishes include the famed Milos Special (crispy zucchini and eggplant with Saganaki cheese and tzatziki), Greek Spreads (taramasalata, tzatziki, htipiti, served with grilled pita and raw vegetables), and Mediterranean Octopus, charcoal broiled to perfection. Guests can also enjoy Grilled Heirloom Onions from Zakynthos, Astakomakaronada (Athenian-style lobster pasta), and traditional Greek desserts like Baklava Kaimaki and Ekmet Kataifi.
For private dining, the Chapman and Oxley Room, named in homage to the building’s architects, accommodates up to 30 guests in an intimate, yacht-inspired setting featuring an exclusive entrance, private washroom, and a 650-bottle wine display.
